
Achimota Mall turned 1 on 29th October and Cake City was there to celebrate with them. How I got that contract is a story for another day… Nii Darku ( the organiser) and I went over the plans and decided to have a cake tower with 500 cupcakes with a wonderful background with the top tier carrying a 12 inch cake topped with fresh flowers. Honestly, this was the biggest order I’ve ever received at once. After several days of researching I decided to use Chrysanthemum flowers- purple and yellow to match the Malls logo.
Executing this was no small feat as my mixer could only mix a little batter at once while my oven could also bake only 144 cupcakes at a time. So even if my mixer could mix more, my oven was going to limit me. So I started the process of baking in batches. Took several hours but alas, I finished.
I managed to setup in the nick of time

- Research and have a plan
- You can do anything if you set your mind to it.
