Oatmeal Raisin Cookies – the Cake City way

Love our oatmeal raisin cookies and want to make something similar at home for your family?

Heres a super easy recipe you can try. As usual, it’s foolproof 😉

 

Ingredients

2 cups margarine or butter

3 cups regular oats (all brands work well)

2 cups all purpose flour ( called soft flour in Ghana)

1 cup brown sugar

Half cup white granulated sugar

Half teaspoon grounded cinnamon

Half teaspoon grounded nutmeg

1 teaspoon baking soda

2 tablespons corn flour

2 eggs

1 teaspoon vanilla essence

2 tablespoons powdered whole milk( optional)

Equipment

Baking sheet

Spatula

Hand mixer ( optional)

2 large mixing bowls

 

Instructions

1. Mix flour, baking soda, corn flour, nutmeg and cinnamon together

2. In another bowl, mix softened butter or margarine and sugar together

Add eggs until well incorporated and fluffy

Add vanilla essence

3. Add dry ingredients in step 1

4. Add oats

5. Use ice cream scoop to size. Roll into a ball and place on a lightly greased baking sheet.

Space the balls out to prevent cookies sticking together as they flatten while baking

6. Place in your preheated oven (180 degrees)

7. Bake for 10minutes

For extra crunchy cookies, leave in oven for an additional 2 minutes

8. Remove from oven and leave on baking sheet for 5minutes to cool

9. Enjoy 😋😋

Serving: Makes at least 35 cookies

 

Variations: Add raisins, pecans, almonds and walnuts as toppings

Storage: Airtight container

 

Note: If you want soft cookies, please omit the corn flour
