Banana cake is a favourite of many Ghanaians. As requested Im sharing one of my banana cake recipes
Bananas are extremely healthy and delicious.They contain several essential nutrients, and have many health benefits. Aside from being very nutritious, they are also a highly convenient snack food.
Here are some health benefits of bananas that are supported by scientific research.
1.Bananas contain a fair amount of fiber, as well as several antioxidants. One medium-sized banana (118 grams) contains Potassium (9% of RDI), Vitamin B6 (33% of RDI) as well as other vitamins and minerals

3.Helps with allergies. A study conducted by the Imperial College of London found that children who ate just one banana per day had a 34% less chance of developing asthma.
4.Reduce blood pressure and the risk of heart disease.

8. Cancer prevention: As a good source of vitamin C, bananas can help combat the formation of free radicals known to cause cancer. High fiber intakes from fruits and vegetables like bananas are associated with a lowered risk of colorectal cancer.

10.Aid in healthy and strong bones development.
11.Aid in weight-loss as they contain pectin. Both pectin and resistant starch have been shown to have appetite-reducing effects and increase the feeling of fullness after meals.
Now lets, get on with the recipe. This is my simplest banana cake recipe and my go to recipe when Im in a hurry to make banana cake. Hasnt failed me yet 🙂
Ingredients
3 large eggs
Half cup of milk
4 medium to large sized overipe bananas
Half cup melted butter (or 2/3 cup oil)
2/3 cup brown sugar
2 cups soft flour
1 teaspoon cinnamon powder.
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon mixed spices
Procedure
Preheat oven to 180°C
Spray pan with baking spray or grease with vegetable fat
Mix and whisk all wet ingredients together until well incorporated
Gently add dry ingredients in 3 batches.
Pour into pan until 2/3 full
Bake for 45 mins
To check if its done: Insert a dry skewer or toothpick. If it comes out dry, cake is done
NB:
Avoid over mixing once flour is added. Over-mixing will cause the cake to lose its fluffiness and come out tough
You can make other variants by adding other ingredients:
Add 3 tablespoon of cocoa powder to get chocolate banana bread
Add 2 teaspoon beetroot juice and 1 tablespoon cocoa powder to make red velvet banana cake
Serving suggestion:
1.As breakfast: Slightly warmed banana cake and yogurt or any juice of choice
2. As desert with ice cream.
